Most venue pricing is quoted per head, which makes it very hard to know what you are actually buying. A per-person figure bundles the space, the food, the drinks and the venue's margin into one number, and the only lever you have is inviting fewer people.
We price the other way around. One fee for the property, and then the wedding is yours to build.

There is no mandatory caterer and no supplier list here, which means the format is a real decision rather than a menu tier. Food trucks, canapés, a shared feast down a long table, grazing, casual catering, or a formal caterer if that is the wedding you want.

That is one real wedding, not a supplier quote and not a price we can guarantee you — but it is what happens when you choose the format rather than buying a package.
The drinks
There is no venue markup on alcohol. Latham and Hannah bought theirs directly from a bottle shop instead of paying a per-person beverage package, which is open to you too. It is worth asking your retailer whether they will take back unopened stock, subject to their terms — many will.
Professional bar service still needs to be arranged, with RSA and licensing requirements confirmed for your specific event and supplier.
The reception
You have four ways to go, and none of them is compulsory.

The accommodation is already in the price
Two nights for up to 13 people are part of the $8,800, not an add-on. Comparable accommodation for a group that size would commonly represent around $3,000 to $4,000 in value.
Some couples ask the people staying on site to contribute what they would otherwise have spent on a room elsewhere. That is worth being clear-eyed about: it shifts part of the cost to the guests who are receiving the accommodation rather than making it disappear. But for a lot of couples it meaningfully offsets what they spend on the venue, and the people staying are usually the ones who would have booked a room in Cessnock anyway.
What the weekend buys you
The three days are the part that is hardest to price and easiest to underestimate. Friday is setup, without compressing a marquee build, a furniture delivery and a styling job into one morning. Saturday is the wedding, with nobody scheduled after you. Sunday is a slow breakfast and a pack-down that is not happening at midnight.
A six-hour window at a function venue is a different product. It is not better or worse, but it is not this, and comparing the two on hire fee alone will mislead you.
